Crack Salad / Avocado Salad

CRACK SALAD

Yields 2 Servings

INGREDIENTS

Crunchy Greens, like 1/2 Head Iceberg or Romaine Lettuce

2 Roma Tomatoes, Roughly Chopped

2 Ripe Avocados, Pitted, Diced

3 Fresh Garlic Cloves, Minced

1 Lemon, Juiced

Olive Oil TT

Salt

Freshly Cracked Black Pepper

Note: Do not use minced jarred or frozen garlic. It will not work with this recipe.

INSTRUCTIONS

  1. GARLIC PASTE: Mince the garlic as fine as possible. Salt the minced garlic, and using the blunt side of your knife, press and scrape the sharp end of your knife against the garlic, angling your blade to flatten, then scrape the garlic across your cutting board.

  2. Add garlic paste, two ripe avocados, roughly chopped iceberg lettuce, a generous pinch of salt, lemon juice, freshly cracked black pepper and a drizzle of olive oil to a steel bowl, in that order. With your hands toss the salad, mixing it up aggressively, until everything is well incorporated.

  3. Taste it. Season to taste and top with roughly chopped tomatoes!
