Cilantro Rice
INGREDIENTS

1 Cup Jasmine Rice, Rinsed
3/4 Cup Chicken or Vegetable Stock
3/4 Cup Water
1/2 Sweet Onion, Diced
3-4 Garlic Cloves, Minced
2 Tbsp Butter
2 Handfuls Cilantro, Roughly Chopped
Olive Oil

INSTRUCTIONS
Begin by rinsing your rice until the water is almost completely clear. This helps rinse the excess starch off the grain thus resulting in a fluffy, not gummy, result.
Saute 1/2 diced onion in a little bit of olive oil and salt over medium heat.
Once the onion has softened, about 2-3 minutes, add minced garlic and stir until fragrant, about 30 seconds.
Next, add 1 cup of rinsed jasmine rice to the onion-garlic mixture, and stir until lightly toasted, about 1 1/2 minutes.
Add 3/4 cup of chicken or vegetable stock, 3/4 cup of water, and 2 tbsp of butter. Turn up the heat to bring it up to a boil.
Once boiling, cover with a lid, turn the heat down to a soft simmer, and set a timer for 15 minutes.
When your timer goes off, remove the lid, turn off the heat and let the rice rest for 5 minutes uncovered.
After 5 minutes, add a drizzle of olive oil, a sprinkle of salt, and two handfuls of roughly chopped cilantro and fluff with a fork.
GRUB with lime wedges!
