Pink Hummus
BEET HUMMUS
INGREDIENTS
1 Can Chickpeas, Rinsed
1 Small Beet
1 Garlic Clove, Smashed**
2 Lemons, Juiced
2 Heaping Spoonfuls of Tahini
1/4 Cup Boiling Water
Extra Virgin Olive Oil TT
Salt TT
Note* I too love garlic an obscene amount. But adding more than one raw garlic clove will result in a bitter taste rather than a garlicy taste. If you want more garlic, add garlic confit or granulated garlic instead.
INSTRUCTIONS
Boil small purple beat in salted water until tender, about 40 minutes. Remove the skin and cut into small pieces.
Process the garlic, lemon juice and salt until smooth. If your food processor is too large to do so, mince garlic and steep in lemon juice and salt for 1-2 minutes. This will prevent it from creating a bitter aftertaste.
Process all the ingredients together then season to taste.
