Sourdough Dressing
DRESSING / STUFFING / BREAD STUFF
INGREDIENTS:
1 Loaf Sourdough, Torn into 1"-1.5" Pieces
6 Celery Ribs, Sliced Thin
2 Leeks, Tops and Bottom removed, Whites Cleaned and Sliced Thin
Herb Medley - 1-2 Handfuls Parsley, 4-6 Thyme Sprigs, 6-7 Oregano Sprigs, Stems Removed, Chopped Fine
5-6 Garlic Cloves, Minced
12oz Breakfast Sausage
2 Eggs
1.5 - 2 Cups Turkey Stock
1 Stick Butter, 6 tbsp & 2 tbsp divided
1/3 Cup Golden Raisins or Craisins, Soaked in Hot Water for 10 min
1/4 Cup Dry White Wine
INSTRUCTIONS:
Preheat oven to 275 F / 135 C
Tear sourdough loaf into 1"-1.5" pieces. Alternately, you could cut them into like-size cubes but I like to tear them for a more rustic look. Pop them in the oven for 40 minutes, or until they dry out.
In the meantime, whisk together 2 eggs, 1 cup of turkey stock, and 1 tbsp salt. Once the bread is dried out, toss it in the egg turkey stock mixture and set aside for at least 10 minutes.
Heat pan over medium heat and cook breakfast sausage until almost fully cooked. Do not DO NOT, overcook it. (It will cook more when we pop the entire stuffing in the oven later.) Remove from the pan and drain off excess fat.
To the same pan you cooked the sausage in, add 6 tbsp of butter (we're not going for health here, people!) and a drizzle of oil of your choosing. Saute leeks and celery ribs until softened, about 3-4 minutes.
Add garlic and stir until fragrant, about 30 seconds.
Deglaze the pan with 1/4 cup of white wine.
Once all the liquid is absorbed, kill the heat and fold in your herbs! Your house should smell ah-maaaaaa-zing right about now.
Add sausage and leek mixture to herbs. Toss her up real nice. Add rehydrated golden raisins and 1/2-1 cup stock. The amount of stock you add will depend on how dry your bread feels. Use your hands! Feel it out!!
Butter and oil the baking dish of your choice and add stuffing to the dish. *SUPER IMPORTANT* you don't want to overfill the pan. Ideally, your stuffing is no taller than 1.5" in height. If you need to, disperse stuffing over two pans!
Top with 2 tbsp of butter all over dressing.
Pop in the oven and turn heat up to 350 F / 175 C uncovered on the middle or bottom rack of your oven for 1 hour or until liquid is absorbed into the bread and she's lookin' like a decadent bread casserole!
