Shrimp and Scallop Pasta

ABOUT THE PASTA

I love pasta and seafood together. Make this for something light yet filling. A perfect pasta at the end of a hot Summer day!

How I prepare this pasta is a similar method to how carbonara is made. It’s my favorite minimal “quick sauce” to add to noodles. Alternately, if you would rather dress the pasta in pesto, simply repeat the procedure above, substituting the pesto for the egg mixture.

My favorite, affordable store-bought pastas include:

FOR THE SHRIMP:

  • ½ Lb (Deveined, Peeled, Tail-on Shrimp)
  • Trader Joe’s Everyday Seasoning
  • Salt & Pepper TT
  • Olive Oil
  • Pat of Butter

FOR THE PASTA:

  • Store-bout pasta
  • 2 Egg Yolks
  • 1 Egg
  • Parmesan
  • Salt & Pepepr TT

INSTRUCTIONS FOR THE SHRIMP:

  1. For the shrimp, season with salt, Trader Joe’s Everyday Seasoning, pepper, and a drizzle of olive oil. Wrap up in foil. Bake at 350 for about 7 minutes. Once done, turn off the oven and remove shrimp. Add a pat of butter to the foil packet then seal it and return it to the oven to stay warm while you prepare the pasta.

INSTRUCTIONS FOR THE PASTA:

  1. Prepare pasta according to pasta directions but make sure to reserve a cup full of pasta water before draining it. I usually just grab a mug to scoop some out.
  2. While pasta is cooking, whisk together 2 egg yolks, 1 egg, a handful of parmesan, salt and pepper.
  3. Once pasta is done cooking, drain it from the pot. Return to the warm pot and stir in half of the pasta water, off of the heat, stirring vigorously. Add the egg mixture and continue to stir. Taste and adjust seasonings as needed.
  4. Top with parmesan, pepper, and herbs.
