Granola
INGREDIENTS
1/2 Cup Coconut Oil, Melted
1/2 Cup Honey or Maple Syrup
2 Tsp Vanilla
2 Tbsp Brown Sugar
1.5 Cup Oats
1/2 Cup Pepitas
1 Cup Pecans, Roughly Chopped
1/4 Cup Slivered Almonds
1 Cup Craisins
1 Tsp Fine Grain Salt
2 Tsp Cinnamon
INSTRUCTIONS
Preheat oven to 325 F / 162 C.
Mix honey, coconut oil, and vanilla together.
Toss pumpkin seeds, almonds, oats, brown sugar, cinnamon, vanilla and salt together.
Mix it all together in the coconut honey mixture.
Layout mixture on a parchment-lined sheet pan and bake for 20-24 minutes, stirring halfway through.
Let it cool to room temperature, or if you're impatient like me, pop it in the fridge for 10 minutes. Then add craisins and mix together.
Store tightly in a ziplock bag or tupperware. Good for up to one week if it lasts that long.
