One Pot Garlicy Smashed Potatoes

GARLICY SMASHED POTATOES

INGREDIENTS

1# Bag of Baby Potatoes

5-6 Garlic Cloves, Thinly Sliced

4 Tbsp Za’atar Seasoning

Kosher Salt

Optional* Thyme

Whipped Feta Dip

Oil of Your Choosing

1 1/2 Tbsp Butter **

Flakey Salt

Note** I find it’s easiest to add the entire stick of butter to the freezer rather than only adding 1 1/2 tbsp butter. It’s easier to grate that way.

INSTRUCTIONS

  1. Preheat oven to 425 F / 220 C.

  2. Pop the butter in the freezer while you prep everything else.

  3. In a deep pot, add the bag of potatoes and cover them with water. Heavily salt the pot of potatoes and bring it up to a boil.

  4. Once the water is boiling, turn down to a simmer and cook until potatoes are fork-tender, about 18-20 minutes.

  5. Strain the potatoes, then return them to the warm pan.

  6. Add seasoning and a generous amount of oil to the pot. Stir around, so the potatoes are evening coated.

  7. Use the bottom of a cup to smash the potatoes, so they are flush with the bottom of the pan. It's okay if some of them overlap each other!

  8. Grate the butter over the potatoes. Don't worry if the butter begins to melt onto the potatoes.

  9. Place potatoes in the oven for 18 minutes or until garlic is very fragrant and potato bottoms have a little bit of color. Color = crunch.

  10. Serve over whipped feta. Top with chives and flakey salt.
