Gambas al Ajillo


GAMBAS AL AJILLO

INGREDIENTS

1 LB Shrimp, Peeled & Deveined

1 Lemon, Halved

6 Garlic Cloves, Thinly Sliced

High-Quality Extra Virgin Olive Oil

Salt

Paprika

Red Pepper Flakes

1 ½ Tbsp Butter

1 Handful Parsley, Finely Chopped

2 Pieces of Toast


INSTRUCTIONS

  1. Coat shrimp in a generous amount of paprika, salt, and a drizzle of olive oil. Toss until the seasoning is evenly distributed.

  2. Meanwhile, heat a large pan on medium heat. Once hot, add a generous amount of olive oil, thinly sliced garlic, and 1 tbsp red pepper flakes. Stir for 45 seconds.

  3. Add seasoned shrimp to the pan and cook for 1 ½ - 2 minutes before stirring around. Add a 1 ½ tbsp butter and stir shrimp around in the garlic-y, buttery oil mixture until shrimp is cooked through, about 4 minutes total.

  4. Add parsley and lemon juice. Set shrimp aside in a serving dish and tent with foil.

  5. Return pan to the stove and add two slices of bread, adding more oil if necessary. Toast on both sides until perfectly golden brown.

  6. Dip toast into shrimp and GRUB!
