Homemade Flour Tortillas

FLOUR TORTILLAS

Bread Flour 180 g
AP Flour 690 g
Fat 140 g - I use a mixture of softened butter and neutral oil
Baking Powder 10 g
Boiling Water 12 oz
Salt 8 g


**Disclaimer - I did this by hand because several of you asked if you neeeeeded to use your mixer. While making the dough by hand did work well, the result from a stand mixer and dough hook was superior!

*Also, sifting the flour is worth the extra hassle/dishes.

Sift 1.5 c ap flour + 1 c bread flour into mixing bowl then add 1 tsp salt and 1 tsp baking powder. Mix until well incorporated.

Add fat and continue to mix around.

Slowly add in boiling water and fold ingredients together until a dough forms.

Weigh tortillas into little dough bois - I like 50g dough balls.

Boule.

Rest for at least 30 minutes. Ideally 2 hours. Don't @ me. I said what I said.

Flour surface and roll those bad bois out.

Cook tortilla over medium heat in an unseasoned cast iron skillet.

GRUB with butta and honey if you know what's good!
