Effortless Salmon Dinner
EFFORTLESS DINNER
INGREDIENTS
1 LB Salmon Filet
Arugula
1 Handful Parsley Leaves
1 Handful Cherry Tomatoes, Halved
1 Roma Tomato, Quartered
1 Seeds of Change 90 Second Quinoa Rice Package
2 Heaping Spoonfuls of Labne, Greek Yogurt or Sour Cream
1 Lemon, Juice & Zest
Salt & Freshly Cracked Pepper TT
Red Wine Vinegar
Extra Virgin Olive Oil
INSTRUCTIONS
1. Preheat oven to 325 F.
2. Line baking sheet with foil and spray with oil. Place salmon skin side down. Rub a generous amount of olive oil over the salmon then top with salt and freshly cracked black pepper.
3. Bake until flakey – 10 to 12 minutes.
4. Meanwhile, microwave Seeds of Change 90-second Quinoa Brown Rice Blend. Halve a handful of cherry tomatoes on 1 Roma tomato.
5. In a bowl mix together ½ of the brown rice package, arugula, tomatoes, salt, freshly cracked black pepper, ½ zest of a lemon and a drizzle of red wine vinegar and olive oil. Serve alongside salmon.
6. In a bowl, mix together labne, the juice of ½ a lemon, a pinch of salt and a dash of water. Mix until thin enough to spread over salmon.
