Easy Mexican Street Corn (Elotes)

 This Mexican Street Corn is a crowd pleaser. It can be prepared with fresh cobs of corn or with frozen corn. It's easy, minimal, and most importantly, delicious!

Mexican Street Corn

  • Ingredients:
  • 4 Tbsp Melted Butter
  • 3 Ears Corn
  • ½ Cup Sour Cream
  • Oaxaca Or Cotija Cheese
  • 1 Lime (Juice & Zest)
  • Cilantro or Parsley
  • Trader Joe’s Everything but Elote Seasoning
  1. Cut 3 pieces of kitchen twine, the length of your hand, and soak in water.
  2. Boil ears of corn in heavily salted water for 5 minutes.
  3. Chop cheese or pulse in a food processor or blender until very fine.
  4. While corn is boiling, mix together sour cream, cheese, lime zest and juice. Set aside.
  5. Once corn is done and cooled slightly, peel and remove tough outer husks. Carefully pull back tender inner husks and tie with pre-soaked twine.
  6. *This step can be done a day ahead of time.
  7. Heat skillet or grill on medium heat. Char oiled corn.
  8. Once charred, remove from heat. Roll in sour cream cheese mixture. Sprinkle Everything but Elote Seasonings. Garnish with parsley or cilantro.
